Simmons: Doors Open

Today is the day that food lovers, history buffs and East Village aficionados have been waiting for – the grand reopening of the Simmons Building. 

The former mattress factory turned culinary hub and East Village gathering place is throwing open its doors – including three new glass doors leading to outdoor seating along Jack and Jean Leslie RiverWalk™ – to welcome you. Come get a taste of the new Simmons, EV’s newest place for breakfast, lunch and dinner. 

The chefs, roasters and bakers who are the Simmons’ new operators are stars of the city’s chow scene –  charbar, Phil & Sebastian Coffee Roasters and Sidewalk Citizen Bakery. They’ve all been poring over menus and perfecting last minute touches in preparation for your arrival. Charbar’s wood-fired grills, Phil & Sebastian’s state-of-the-art roasterie and Sidewalk Citizen’s full-view baking ovens are all fired up and raring to go.

You won’t believe your eyes when you step inside. During two years of painstaking and loving rejuvenation led by EV master developer CMLC, historical elements were carefully preserved with an eye to the future – making Simmons both a testament to EV’s rich history and a dynamic cornerstone of its vibrant destiny. Historical elements like the original wood-sashed nine-paned windows have been meticulously replicated to meet modern standards. A metal trap door that once dropped mattress stuffing from the attic to the shop floor, and a walk-in vault with a steel door, have both been preserved as a tribute to Simmons’ industrial past.

Opening up part of the second floor has filled the building with light and space, making the original brick walls, wooden ceiling and massive fir posts and beams even more apparent and giving the Simmons a cool, contemporary appeal. The new glass doors along RiverWalk allow for riverside seating and a ringside view of the many events on our beloved pedestrian and bike promenade. And just wait till you see the new rooftop patio! With ample seating, remarkable views of RiverWalk, the Bow River and St. Patrick’s Island – and with charbar’s custom-made parrilla serving up wood-grilled offerings – the rooftop at Simmons may just become your new favourite spot.

The Simmons will be open at 8am starting today so you’ll be able to enjoy it from dawn to dark and beyond. Come taste for yourself.
